Dairy free & Gluten free Mint Chocolate Chip Ice-cream Sandwich

INGREDIENTS:

Cookies:

Mint Ice-cream 
  • 4 Ripe frozen bananas
  • 1/2 Avocado 
  • 1 tsp E3live fresh frozen Spirulina
  • 10 drops stevia (or sweetener of choice - exp: 1 tbsp maple syrup)
  • 1/2 tsp organic mint extract
  • Crumbled santosha chocolate or Gluten/Dairy free Chocolate chips (optional)

INSTRUCTIONS:

Cookies:

  1. Preheat oven to 350° F
  2. Combine egg, 2 Tbsp of cashew butter, 2 Tbsp of coconut oil, and vanilla extract
  3. Add cookie mix to liquid ingredients and blend well to form a ball in the bottom of the bowl
  4. Drop dough using a 1 TBSP scoop onto a baking sheet
  5. Bake for 12-14 minutes until the outside of the cookies begin to brown slightly
  6. Remove from oven and let cool
Mint Ice-cream:
  1. Blend all ingredients except for chocolate chips together in Vitamix
  2. Fold in chocolate chips or crushed santosha chocolate
  3. Place in freezer for 3-4 hours, then scoop in between two cookies!
